Rainbow Trout with Mango Salsa

This recipe is mango-nificent! 🥭 Our new friend Mirna ( @yalla.lets.eat ) created this tropical blend just in time for winter.

INGREDIENTS

Mango Salsa:

  • 1 mango diced
  • 1/2 cup cherry tomatoes diced
  • 1/3 cup red onions chopped
  • 1/2 cup fresh cilantro chopped
  • 1 lime
  • 1 tbs olive oil
  • Salt and pepper

Trout:

  • 2 trout filets
  • 2 cloves garlic crushed
  • 1/4 cup olive oil
  • Salt and pepper

DIRECTIONS

  1. Salsa: Dice and chop salsa ingredients, and mix all together. Set aside until the fish is cooked.
  2. Trout: Mix olive oil, garlic, salt and pepper and divided onto the two rainbow trout filets.
  3. Place onto lined tray with parchment and bake at 350 degrees for 15 – 20 minutes depending on the thickness of the fish.
  4. Top with the mango salsa and ENJOY with your favorite side.
