This is a favourite of ours at the farm. We add melted cheese, grilled pineapple, green slaw and an aoili for a succulent treat!
INGREDIENTS
- 8 pickerel burger patties (2 packs)
- One cored and skinned pineapple
- Fish seasoning
- Olive oil
- Green slaw — pre-made from the store, or make your own: https://food52.com/…/31608-green-cabbage-slaw-krautsalat
- Aioli — You can also get pre-made mixes using chipotle or lemon-dill, or make your own: https://www.spendwithpennies.com/chipotle-aioli/
DIRECTIONS
- Cut a pre-cored pineapple into 1/4″ slices.
- Brush oil generously on the pineapple and the frozen pickerel patties. Sprinkle some fish seasoning on the burgers for some added kick.
- 2. Heat your barbecue to medium-high. Throw on the pineapple and pickerel patties. Grill for 4 – 5 minutes, and then flip.
- Place thin slices of havarti on top of the pickerel fillets. Grill the patties and pineapple for another 4 – 5 minutes, and remove.
- Prepare any green slaw. We buy pre-made broccoli, kale or cabbage slaw from the store, or make our own.
- Get your aioli ready.
- Stack the pickerel burgers with the pineapple first, then pickerel, then aioli, and slaw. It’s a-trout-ciously good!
