Ingredients
Fish
- 6 x 5oz portions of Springhills trout fillets
- 1 bottle of Humble & Frank Hawaiian Sesame Soy sauce from your local Metro store
- ½ teaspoon each salt and pepper to season
Salsa
- 3 cups finely diced pineapple
- 1/3 cup minced red onion
- 1 large jalapeno seeds and ribs removed, then minced
- 1 red bell pepper cored, seeded and finely diced
- 1/2 cup chopped cilantro
- 2 tablespoons lime juice
- salt to taste
Directions
- Place fillets in a glass container, skin down. Season with salt and pepper, and drizzle on marinade, refrigerate 1-8 hours.
- Preheat BBQ or pan fry over medium high heat.
- Place fillets skin-down and cook for 5-6 minutes on each side or until internal temperature reaches 145 °F (62.8 °C).
- From bottle, brush-on reserved marinade, top trout with fresh salsa and serve.
- Pairs great with coconut rice, grilled summer veggies and salad.
