Our friend Farhana Batliwalla at @batliwallafarhana dreamed up this creative recipe for Tandoori Trout Koliwada that’s a taste-packed way to enjoy any Springhills trout, salmon or Arctic char!


  • Springhills trout, coho salmon or Arctic char, thawed, 400 gms
  • Besan (gramflour): 3/4 cup
  • 3 tbsp cornstarch powder
  • Green chili mint paste : 1tbsp
  • Chilli powder: 2-3tsp
  • Turmeric powder: 1/2tsp
  • Amchur(Dry mango powder): 1tsp
  • 2 teaspoons black pepper powder
  • Garam masala: 1tsp
  • Ajwain: 1tsp
  • 2 teaspoons Kashmiri chili powder
  • 2 teaspoons paprika powder
  • 2 tsp tandoori masala
  • Saunf or fennel seed powder : 1tsp
  • Salt to taste
  • 1 egg white
  • Oil for frying


  1. Cut the fish into bite sized pieces.
  2. Add all the ingredients and make a batter.
  3. Marinate the fish fillets in the batter for 15 to 20 minutes
  4. Deep fry the fish in oil and serve hot with mint chutney or tomato ketchup.
