The Springhills family could not be more excited to hook a supply of striped bass from New Brunswick. Striped bass is a refined white fish with gentle sweetness, firm texture and rich, buttery flakes.
Springhills striped bass is harvested by Indigenous fishers from Natoaganeg First Nation, and caught from the province’s tidal rivers where ocean and freshwater meet.
Here are some of our favourite (and simple!) ways to enjoy this deliciously Canadian fish:
1. Striped bass with white wine, tomato and basil sauce
Pictured above.
Carolyn Gratzer Cope from Umami Girl says “This easy striped bass recipe comes together in one pan with very little work. It’s simple enough for a weeknight dinner but looks so beautiful, bursting with rainbows, that it’s great for company, too.”
Ingredient list: Olive oil, garlic, cherry tomatoes, dry white wine, fresh basil, salt & pepper, striped bass fillets
2. Pan-seared striped bass with lemon and capers

Sarah at Champagne Tastes says, “One of my favorite ways to prepare bass is, of course, to cook it in butter. This pan-seared bass is cooked with butter and topped with a lemon caper sauce.”
Ingredient list: Butter, olive oil, lemon juice, capers, garlic, parsley, striped bass fillets
3. Butter parmesan baked striped bass

This one comes from Lillian Russo at Just a Pinch who says “I can honestly say that this is the best broiled filet of fish I ever ate!!! The butter, the wine, the lemon zest and the parmesan cheese all go so well with this fish!”
Ingredient list: Butter, dry white wine, lemon zest, grated Parmesan, garlic powder, paprika, striped bass fillets
4. Grilled striped bass with sweet corn succotash and grill butter

If you want to get a little fancier on the barbecue, Andrew Zimmern shares how we prepares striped bass on the grill. He demonstrates how to grill striped bass, and top it with an herb-packed compound butter, served alongside a smoky corn succotash studded with charred poblanos.Â
Ingredient list: Corn, poblano peppers, cherry tomatoes, scallions, fresh herbs (parsley & chives), butter, lemon, striped bass fillets
Enjoy this new fish from Springhills because it’s BASS-ically the best and you’ll be an amBASSador in no time!
