Thai-waiian Pickerel Burgers

INGREDIENTS

  • 4 pickerel burger patties (1 pack)

  • 4 thick slices fresh pineapple

  • 1/3 cup soy sauce

  • 2 tbsp brown sugar

  • Juice from 2 limes

  • 2 cloves minced garlic

  • 2 tsp onion powder

  • 1/2 tsp black pepper

  • 1/2 tsp basil

  • 1-2 tsp harissa

  • Fresh cilantro & scallions, to taste

  • 4 slices gouda

  • Bun of your choice (we recommend potato buns or taro buns!)

DIRECTIONS

  1. Mix soy sauce, lime juice, garlic, & spices together in a bowl.

  2. Place the burgers & pineapple in a shallow dish & pour the mixture overtop.

  3. Allow to marinate for 15 minutes.

  4. In the meantime, heat your bbq on high.

  5. Cook fish & pineapple for about 5 mins on each side. The burgers are done when internal temperature reaches 145 degrees.

  6. While the burgers & pineapple are cooking, put the rest of the marinade in a small saucepan. Bring to a boil & reduce to a summer, until the mixture thickens.

  7. Assemble burgers on your bun of choice with Gouda, a pineapple slice, scallions, cilantro, & the reduced sauce. Enjoy!
