Thai-waiian Pickerel Burgers

4 pickerel burger patties (1 pack)
4 thick slices fresh pineapple
1/3 cup soy sauce
2 tbsp brown sugar
Juice from 2 limes
2 cloves minced garlic
2 tsp onion powder
1/2 tsp black pepper
1/2 tsp basil
1-2 tsp harissa
Fresh cilantro & scallions, to taste
4 slices gouda
Bun of your choice (we recommend potato buns or taro buns!)
Mix soy sauce, lime juice, garlic, & spices together in a bowl.
Place the burgers & pineapple in a shallow dish & pour the mixture overtop.
Allow to marinate for 15 minutes.
In the meantime, heat your bbq on high.
Cook fish & pineapple for about 5 mins on each side. The burgers are done when internal temperature reaches 145 degrees.
While the burgers & pineapple are cooking, put the rest of the marinade in a small saucepan. Bring to a boil & reduce to a summer, until the mixture thickens.
Assemble burgers on your bun of choice with Gouda, a pineapple slice, scallions, cilantro, & the reduced sauce. Enjoy!
