Thai Style Arctic Char Burgers
From our friend Chef Carey Mitchell at Wild Thyme Foodie near Durham

Makes 6-8 patties
Preheat oven to 350’F/ 177’F
Ingredients:
1Lb Arctic char , thawed, & skin removed
1 medium Spanish onion, diced
1 stalk lemongrass, roughly chopped
2 thumb size nubs fresh ginger, roughly chopped
Tablespoon mustard seed
Tablespoon cumin powder
teaspoon chili flakes
20 leaves Thai basil, (or Italian)
1/4c packed cilantro
2 eggs
3 Tablespoons black sesame seeds
Tablespoon salt
3/4c panko crumbs ( or any bread crumb will do )
Directions:
In food processor/ blender first purée lemongrass, ginger , & onion
Add ALL other ingredients to blender with lemongrass, ginger, & onion
Forms patties, mixture may be a little sticky but will hold together once cooked
Heat frying pans on med-high heat , put oil of choice down
Once hot , pan sear patties (approx. 2-3 mins each side, until browned)
Place in oven for about 7-10 mins, until internal temperature reaches 145’F/63’C
